Prawn Cocktail Ingredients list (for 4 people):

  • 1 avocado
  • mixed salad leaves (canons and arugula)
  • ½ small purple onion, cut into strips
  • 1 segmented orange
  • 2 tbs. of olive oil
  • the juice of a lime
  • salt and black pepper to taste
  • 24 prawns (cooked and peeled)
  • 4 tbs. of pink sauce (salsa rosa)
  • 4 lime slices, for garnish
  • chopped chives for garnish

Instructions:

  • start by running a paring knife lengthwise around the avocado.
  • Gently twist to separate the halves, then remove the pit.
  • Slices the avocado halves (while still in the shell) first vertically and then horizontally.
  • Using a spoon, scoop out the avocado cubes into a bowl with the mixed salad leaves.
  • Add the onion strips and the orange segments.
  • In a separate bowl, add the olive oil, lime juice, salt, and black pepper to taste.
  • Mix until well emulsified, then pour over the salad.
  • Toss until evenly coated.
  • To assemble, put some salad into each cocktail glass.
  • Then place five prawns over the salad.
  • Top with a tablespoon of pink sauce (salsa rosa).
  • Garnish with a prawn and a slice of lime.
  • Sprinkle with chopped chives and the prawn cocktail is ready to eat!
