Shrimp Salad Cups

Hello there! I will show you how to make a super delicious Shrimp Salad Cups appetizer or Eggs Salad Cups.

Shrimp Salad Cups  INGREDIENTS LIST:

– 12 empanada dough discs
– Mixed salad leaves (mesclun)
– 12 red and yellow cherry tomatoes
– 6 shrimp, peeled
– 6 slices of hard-boiled egg
– 7 crab sticks (cut into pieces)
– Salsa rosa (pink sauce)
– Extra virgin olive oil
– Salt

Instructions

  • Start by placing the empanada dough discs over the back of muffin tins
  • Using a fork, poke holes in the dough to prevent bubbles from forming
  • Bake in a preheated oven at 180c (350f) until crispy and golden brown
  • Remove from the oven and let cool completely
  • Meanwhile, heat some oil in a skillet over medium heat
  • Add the shrimp, season with salt and cook until golden brown on both sides
  • Remove from the heat and set aside
  • Cut the cherry tomatoes in half
  • To assemble, place some mesclun and 2 cherry tomato halves into a dough cup
  • Then place some crab stick pieces and top with a tablespoon of salsa rosa (pink sauce)
  • Finally, place a shrimp or a hard-boiled egg slice on top
  • Repeat with the remaining cups, and the appetizer is ready to eat!
